How to make cold brew coffee with iGulu

  1. Clean and sanitize the beverage-contact parts. Wash your hands, then clean the keg, lid, filter bag, tools, and any part that will touch the coffee. Follow iGulu’s current cleaning instructions for your model.

  2. Grind the coffee coarse. Fine grounds extract quickly and can pass through the filter, leading to bitterness, cloudiness, or sediment. Aim for an even coarse grind rather than a mix of powder and large pieces.

  3. Weigh the coffee and water. Start with 200 g of coffee and 2,000 g of water for a 1:10 ratio. Measure by weight for repeatable results.

  4. Fill and close the filter bag. Leave room for the grounds to expand, then tie or seal the bag securely. Put it in the sanitized keg, add clean room-temperature water, and gently move the bag until all grounds are wet. Do not squeeze it aggressively.

  5. Start cooling immediately and keep the batch refrigerated while it extracts. Use the cooling workflow supported by your iGulu model and current firmware. Target normal refrigeration temperature—about 39°F/4°C—and keep the batch at or below 41°F/5°C.   6. Taste at 18 hours. Remove a small sample with clean equipment. If it tastes balanced, stop the extraction. If it is still weak, continue toward 24 hours. More time is not always better: over-extraction can add woody or bitter notes.

Why cold brew tastes different from hot coffee

Cold water extracts coffee compounds more slowly and in a different balance than hot water. That often produces a smoother-tasting cup, but “smooth” does not mean acid-free. A peer-reviewed comparison found that hot- and cold-brew coffee had comparable pH values, while hot coffee showed higher total titratable acidity and antioxidant activity. In other words, it is more accurate to describe the measured differences than to claim cold brew is automatically healthier or universally less acidic.

Extraction also changes with grind size and contact time. Research on cold-brew preparation shows that these variables affect dissolved solids and compounds such as caffeine and chlorogenic acids. What our flavor experiments taught us

Alongside the water-based batch, our team also explored apple juice and an apple juice–jasmine tea blend. Apple brought fruit aroma and sweetness; jasmine added a lighter floral layer against the coffee’s dark chocolate and roasted-nut notes.

Those trials were useful for flavor development, but sweet or botanical liquids add more variables than water. Pulp, tea leaves, and fine particles can interfere with the flow path, while sugar changes storage and food-safety considerations. Three ways to serve the finished cold brew

1. Light and easy-drinking

Use a 1:12 ratio and begin tasting at 16–18 hours. A medium roast can keep the cup bright without becoming too intense. Serve over ice and expect dilution as the ice melts.

2. Bold concentrate

Use a 1:8 ratio, then dilute the finished concentrate with water or milk in the glass. Start with one part concentrate to one part water and adjust to taste. Label the batch as concentrate so nobody mistakes it for ready-to-drink coffee.

3. Our apple-jasmine cold brew mocktail

To recreate the flavor direction safely and repeatably, prepare the coffee with water first. In the glass, combine three parts cold brew with one part pasteurized apple juice and a small splash of separately brewed, fully chilled jasmine tea.
