Yes. If you want a more alcoholic kombucha, start with primary fermentation first, then continue with the following steps:

• Ferment for 4-5 days: Let the SCOBY ferment for about 4-5 days first.
• Taste for acidity: Taste along the way and stop when it reaches your preferred acidity.
• Remove the SCOBY: Take out the SCOBY once the desired acidity is reached.
• Add juice or sugar: Add your preferred fruit juice or sugar for the next stage of fermentation.
• Seal and continue fermentation: Seal the fermentation keg and place it into the iGulu machine to continue and complete the fermentation process.

Please note that alcohol level may vary depending on the ingredients, sugar content, and fermentation time.

Not necessarily, but we strongly recommend thoroughly cleaning and sanitizing all parts after brewing kombucha, sour beer, kefir, or other bacteria-based fermented drinks.

This includes the fermentation keg, lid, beverage tube, dispensing line, seals, and any accessories that come into contact with the liquid. Residual bacteria or yeast may affect future beer batches and could lead to unwanted sourness or contamination.
