  Hi Sean, dont have to have the co2 tank installed before brewing starts. installing co2 tank anytime during the fermenting process is totally ok.

  Sean, You will also be able to serve a few glasses if the beer is done before you get a CO2 tank without using the regular air pump as the fermentation will naturally carbonate the beer and leave enough to serve a few pints too.
